Lately, I’ve been pinning things on Pinterest and then actually doing them. Shocking, I know. For Valentine’s Day I made a red velvet poke cake. I had never heard of a poke cake until recently and now I believe all cakes should be of the poke variety. The only way to truly make cake better is to fill it more delicious things which is what the poking accomplishes.
I followed the recipe from the Country Cook exactly. I recommended making the pudding RIGHT before you pour it in the holes because otherwise it thickens too quickly. Yum!
